Super quick to prep and even quicker to bake.An excellent snack throughout the day or something sweet of an evening.

These are pretty addictive – I ate 4 before they had even cooled properly. Meh no processed sugar in them, so it doesn’t really count)

Ingredients:
Maple syrup – 1 cup
Peanut Butter – 1 cup (crunchy or smooth)
Vanilla Extract – 1 tablespoon
Eggs- 2
Rolled Oats – 1 and a half cups
Chocolate Chips – 1 Cup (optional)
Baking Powder – 1/2 teaspoon

Method:

Pre-heat your oven to 160 Celsius. Mix all your wet ingredients in a bowl (maple syrup, peanut butter, eggs and vanilla extract).

Then add your dry ingredients mixing with each add (rolled oats, chocolate chips and baking powder).

When it is all mixed together, get a spoon and put small mounds on a baking sheet and pop into the oven for 14 mins (or until they are golden in colour and firm in the middle, but not hard)

Enjoy!
